So one of the things I love about being vegan is that there’s a lot of foods that can be eaten raw or don’t take much time to prepare at all. One of my favorites is making quick salads when I don’t know what else to eat. After eating strawberry pancakes for both breakfast and lunch today I decided to make one of these salads for dinner. It only took a few minutes to throw together and my hunger was satisfied quickly. My housemates (none who are vegan, mind you) actually gave it a try and they loved it!
